For many people grilled cheese is a taste from childhood. I didn't learn to eat cheese until I was about 21. I'm super picky now about my food and I've relaxed so much. When I was a kid I didn't many things though was still a little heifer. I only ate cheese that was on pizza. I don't think I ate it on top of tacos and I didn't eat enchiladas. You would never find me eating a piece of "raw" cheese. That was my term for unmelted yucky uncooked cheese.
Now I'm a hard cheese fiend. I like my Swiss to bounce. Do you know what I mean? It needs a firmness that is only producible in Europe. I've tried mass market US-made Swiss cheeses and they leave me limp. If I can squeeze a cube between two fingers it is either not cold enough or not hard enough and I'm not going to enjoy it, not one bit.
At lunch time I went to the cafeteria with the intention of not getting a salad. (I pretend to be good during the day at work and then all hell breaks loose at home at night.) I didn't want a salad today with the processed sliced turkey meat that is the protein choice at the salad bar. I walked in and chatted up another Sue. She was waiting for a grilled cheese. Not just American on white but garnished with tomato and bacon. Yum! Most picky eaters are white bread people, not me. I had it on wheat. And it was heavenly!
In case you were wondering, I had a little green salad too, without dressing. And since then I've had two servings of trail mix and one Hershey's nugget.
